Easy Banana Pancakes

  • I've been getting more creative with my baking and cooking lately and thought I'd share one of my favorite concoctions, easy to make!

  • Ingredients
  • 2 eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1 tablespoon ground cinnamon
  • 1 teaspoon ground ginger
  • 2 cups all-purpose biscuit baking mix (I use Bisquick or Krusteaz)
  • 3 bananas, mashed

  1. Whisk together eggs, milk, vanilla extract, cinnamon, and ginger in a bowl until smooth. Stir in the baking mix until moistened, then add the bananas, and stir to moisten (don't over-stir, this will stiffen and dry the texture).
  2. Heat a lightly oiled/buttered griddle or frying pan over medium heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Flip over once bubbles appear on the top. Cook until browned on the other side. YUM!
