Andes Mint Chocolate Cookies

Okay, so, I'm a Pinterest-aholic. Not only did it inspire me to make the wreath, I love baking and cooking with ideas from there. These are so yum.

Andes Mint Chocolate Cookies


Ingredients:
1/2 cup oil
1 box devil's food cake mix (try to find one that asks for 2 eggs or fewer for easier rising)
2 eggs
1 box Andes Mints

Directions:
Blend eggs and oil together in a bowl with a whisk. Add cake mix and mix well with rubber spatula. Put into cookie form and bake at 350 degrees F for 8-9 minutes (any more and they get super crunchy). Place unwrapped Andes mint on top of cookie immediately after removing from the oven. Leave cookie on the sheet for firming and to allow the mint to melt. After 1-2 minutes, take a spoon and swirl the mint over the cookie.
